The PAIRING PROJECT returns for it’s second serving for 2025 with….The Roebuck Bay Hotel X Diageo Presents… an exclusive evening with BUNDABERG RUM in The Lounge Bar, Saturday 10th May 2025. Enjoy a specially curated by Head Chef Bronte Michell paired with some premium rums from the Bundaberg Rum family. Check out the menu & paired rums below.

This is an intimate dinner in our beautiful bar with a maximum of 40 guests. This will allow you the time and space to really learn about this long time Australian distillery & the incredible story behind one of the country’s most famous brands.All guests will get access to exclusive offers from the team at Bundaberg Rum & lucky door prizes.

ENTREE: Grilled Threadfin Salmon served with roast tomato & corn relish, crispy fried kipfler potatoes

Tasting notes - Creamy vanilla, muscatels, butterscotch sauce and bright orange marmalade with a delicate nuttiness.

MAIN COURSE: Roast Pork Sirloin served with char-grilled broccolini, sweet potato puree & apple chutney
